Japanese Egg Salad Sandwiches!

While ubiquitous across Japan, it can be hard to find a proper rich and fluffy egg salad sandwich on this side of the Pacific Ocean.

Treat your family and friends with this authentic recipe. A perfect addition to your summer picnic.

Kewpie cage-free mayo is available at select Costco locations this summer and Kewpie Original Mayonnaise is available at Kewpieshop.com.

Here's what you'll need:

  1. 1/2 tsp Dijon Mustard
  2. 1-2 Scallions, chopped
  3. 1/5 Red Onion, minced
  4. 1.5-2 tbsp Kewpie Mayonnaise
  5. 1-2 Celery Stalks, minced
  6. 2 Jammy Eggs (not-quite hard boiled)
  7. 4 Hard Boiled Eggs
  8. White Pepper and Salt, to taste

Make the egg salad:

Set the Jammy Eggs aside. Chop up the hard boiled eggs and mix everything together (except the jammy eggs).

Assemble and enjoy

Halve the jammy eggs and place on bread, add egg salad and cut off the crust.

Enjoy your fresh and delicious Japanese-style egg salad sandwiches!
